Easy Coconut Cake Another delicious recipe supplied by Judy T. Robbie specially asked for this recipe.  So glad he enjoys cooking.   Ingredients:  1 cup dessicated coconut 2 small eggs beaten 1 cup SR flour  125 grams butter melted 3/4 cup caster sugar  1/2 cup milk 1 small tin drained crushed pineapple. (optional but makes it very, very nice!)   Method: Sift flour into bowl, add coconut, sugar and mix. Combine melted butter, milk and eggs and add to dry ingredients. Stir to combine. Can use beaters but I just do it by hand. Place in a greased slice tin and bake in a moderate oven 20 - 25 mins.  Ice with vanilla or passion fruit icing. Variations: Leave out pineapple and add grated apple and walnuts or 1 tablespoon cocoa Can be used for patty cakes
