Easy Coconut Cake


Another delicious recipe supplied by Judy T.

Robbie specially asked for this recipe.  So glad he enjoys cooking.
 

Ingredients: 
1 cup dessicated coconut
2 small eggs beaten
1 cup SR flour 

125 grams butter melted
3/4 cup caster sugar 

1/2 cup milk
1 small tin drained crushed pineapple. (optional but makes it very, very nice!)
 

Method:
Sift flour into bowl, add coconut, sugar and mix. Combine melted butter, milk and eggs and add to dry ingredients. Stir to combine. Can use beaters but I just do it by hand.
Place in a greased slice tin and bake in a moderate oven 20 - 25 mins.

 Ice with vanilla or passion fruit icing.

Variations: Leave out pineapple and add grated apple and walnuts or 1 tablespoon cocoa


Can be used for patty cakes

 Hi all, Here a brief overview of our 2 day adventure on Fraser Island with Fraser Island Explorer Tours. It was very smooth no seasickness this time :) We got on the 4x4 wheel bus and headed inland to Lake Mackenzie. This was a very picturesque spot. The water was very cool and the sand as white as we've seen it. After this we headed to Central station , the old tree clearing head quarters. Next we headed for Lake Wobby which was a 45 min trek in and 45 out across lots of sand. It sits on a big sand-blow which will eventually disappear. A small fresh water lake with a couple of cat fish in it. Then off to our accommodation for the night.
